It would be very interesting to have a program that converts the photo with the opening times into the OSM text.
Yeah, I had the same idea some time ago. You can read about it here: https://lists.openstreetmap.org/pipermail/talk/2021-April/086397.html
Apart from what is written there, there is no progress as far as I know.
