I'd like to find a "Marroni-Stand" and did not find any hint how to map this? A "Marroni-Stand" is a Taginfo gives an empty response and OSM Wiki asks me "Did you mean (Mikel) Maron" :-> (even "Verkaufsstand" is currently not known in the Wiki) Any ideas?

In some towns (like Zürich) they have a given design and they are strongly reglemented. You need a special license to sell maroni. In Zürich they are only allowed from 1.10. to 31.3.

Ok. The tag scheme sounds reasonable. But why cuisine=maroni and not cuisine=chestnut? Because it's only of regional importance/dissemination?

Chestnuts would be the correct English name, however there are no stalls in England selling them. You can however buy them and roast them at home. Or you can play conkers with them: http://en.wikipedia.org/wiki/Conkers

Yes, I think that I've seen such stalls also in Germany and Austria.
So to summarize, the proposed tag scheme is:
